This extra virgin olive oil is a blend of early harvest Arbequina (mainly green and yellow olives) and a very late harvest Tuscan variety (all very black mature olives). This is a very delicate but complex olive oil, fruity, mild taste of mature olives. The taste starts out round and buttery in the mouth, then the sensation grows to a “crescendo” of pungent flavors in your throat.
