Harvest Time at Olea Farm

Olea Farm begins the harvesting process in the fall. Starting in mid October and finishing just before the first freeze, usually in December or early January. All of the olives will be picked by hand and washed to prepare them for processing. The olives are then processed by Mill On Wheels and master miller Yves Julien. Mill On Wheels is a local Mobile milling facility based at Olea Farm and is co-owned by Olea Farm's Yves & Clotilde. After the olives are pressed the juice is transferred to the Olea Farm on site bottling facility for bottling, labeling and packaging for sale. “Frantoio” (fron-toy-yo) This olive oil is made from Frantoio an Italian/Tuscan varietal. It is the oldest and most popular olive in Italy. It is difficult to find in the United States. It was harvested and crushed in December 2010 by Olea Farm's master miller Yves. This high quality oil is aromatic and rich with a pungent and fruity sip. Very limited quantities.
