Olea Farms begins the harvesting process in the fall. Starting in mid October and finishing just before the first freeze, usually in December or early January. All of the olives will be picked by hand and washed to prepare them for processing. The olives are then processed by Mill On Wheels a local Mobile milling facility based in the Templeton area. After the olives are pressed the juice is transferred back to Olea farms for bottling. It is at Olea farms that the olive oil is bottled, labeled, and packaged for sale.
